BREAD AND SCONES

“The Great Nowra Bake-off”

31020     Date Scones – Plate of six – Made using the recipe of well known                                        Show Society exhibitor, Life Member of Nowra Show Society and                              author of “My Favourite Recipes” Mrs Voni Muller.

Voni made these scones very Sunday morning for decades for her family to enjoy for breakfast. Voni first entered cooking at local Shows at the age of fourteen and has continued to not only enter competitions, but has gone on to teach and judge preserves, cakes and scones at local agricultural Shows.

Recipe to be followed:

Date Scones

30 minutes preparation                                                                             12 minutes cooking

2 cups chopped dates

4 cups SR Flour

1 tsp salt

1 tsp baking powder

1 ¾ cups icing sugar

1 ¼ cups cream

½ cup milk

1 egg

Pre-heat oven to 2000 C. Line a large baking tray with baking paper.

Chop dates then slightly soften by steaming and sit aside (I just put them in microwave for 10 seconds). Sift flour, baking powder and salt into a bowl. Add sifted icing sugar and stir well. Add soften dates and mix with butter knife. Break egg into bowl, add about ½ cup milk and beat together. Add cream and egg mixture to flour and date mixture. Mix all together, adding about ¼ cup milk and water mixed together if mixture is too dry. Place on to floured surface, knead well and roll out to desired thickness (about ½ inch). Cut into small circles using a cookie cutter (be sure to dust rim with flour so scone mix does not stick to cutter). Place scones next to each other (so they are just touching) on a tray lined with baking paper. Brush each scone lightly with milk (optional). Bake in hot oven (2000C) for about 12 minutes. Scones will be slightly golden on top when cooked. Turn onto cooling rack to cool and cover with a tea towel. Serve warm with butter

NB: If scones are being made for Show competition they are not to be touching on the tray when you cook them.
